This beautiful lot comes from Ivan Solis, a lifelong coffee producer in the Los Santos region of Costa Rica. After years of mastering quality control and processing at the renowned CoopeDota cooperative, Ivan and his family launched Solis & Cordero Micro Mill in 2017. More than just a mill, it’s a family-run project dedicated to passing on tradition to his children while supporting local farmers he’s worked alongside since his early days in coffee.

The coffee itself is crafted with precision: hand-picked cherries are floated to remove defects, washed clean, and then undergo a carefully controlled anaerobic fermentation. Using mosto (coffee juice and yeast from previous fermentations), Ivan’s team ferments the cherries for 144 hours, then an additional 48 hours after the mosto is removed, creating layers of depth and nuance in the cup.

The result is extraordinary, a coffee that’s both elegant and adventurous, bursting with tropical fruit character, crisp acidity, and a smooth, tea-like finish. It’s the kind of lot that shows why Costa Rica continues to be a leader in innovation and quality in the specialty coffee world.
