This extraordinary Wush Wush microlot comes from Yirgacheffe, crafted under the expertise of renowned Ethiopian producer Israel Degafa. At his washing station, Israel has developed a proprietary anaerobic fermentation he calls “alcoholic” — a meticulous 96-hour process that highlights vibrant, winey characteristics while maintaining balance and clarity. After careful grade 1 cherry selection, the coffee ferments in airtight bags under close monitoring before being sun-dried on raised beds in the traditional natural style.

The result is a stunningly expressive cup: juicy fruit notes of strawberry, banana, and blackberry, lifted by crisp citrus and finished with silky sweetness reminiscent of sugar cane.
